I am now experimenting pizza and perhaps snacks like cakes, cookies so that my son who is in P1 can carry with him for his meals. I check out the food sold in the canteen, not that healthy in my opinion and even it costs cheap, it is not healthy. Watching his friends consume the soda and sugary drink, he will be influenced at one point or another. Thus, it is important that he has a healthy breakfast to start his day. Today he has his soya milk, toasted bread with chocolate jam and a bowl of cereals (hope he could wean off dairy milk soon).
While the wholemeal bread take a longer time, 5 hours to be exact, it is much healthier and I would strongly recommend it. I think with an oven, I could follow many of the yummy recipe I found online. I particularly like the vegan , fuss free and need minimal ingredients else it is too time consuming going around buying the ingredients and making just one loaf.
There is something that I realize too! My mental alertness or energy level , whatever it is called is much more consistent than before. I used to drink 1-2 cup of coffee back then and somedays I truly felt like a zombie and can't live without one. After weaning off for more than 2 weeks and eliminating dairy products (main culprit - milk since yoghurt and cheese I do not consume much), I noticed that I have more sustainable energy. Not the sudden outburst type by mild and fairly even, is hard to describe , I guess. One has to really switch his diet to experience what I feel. And if I am right, what is indigestible in the past are slowly eliminated and I am putting in more digestible food like soya milk, tofu, lots of veggies and fruits.
As a vegan, I still find it appalling many of the stalls out there that proclaimed to served vegetarian food have 50% of their total dishes offered in fried, mocked meat,etc and the vegetables are overly cooked from the sight of it. Beside the brown rice, there is really no real appeal for me. That can be a challenge since at times we have to eat out and I have to be flexible or it will affect my social life. Preparing meals in advance is one good way definitely since I can control what I like to eat and ensure that I do not give allowance to other food from entering my body.
That is why homemade wholemeal bread is attractive to me, not only to serve as breakfast but act as a sandwhich which I can bring along anywhere, anytime.
